What the Utah food handlers permit test asks

Rule R392-103 draws the exam from four content sections: limiting harmful pathogens; destroying pathogens and preventing contamination; equipment, utensils and linens; and employee health and hygiene. The first four topics here are those sections.

What Utah does differently

Utah incorporates the 2022 Food Code, so sesame is the ninth major allergen. Its rule defines a double handwash, after the toilet room and again before handling food, and keeps mushrooms picked in the wild off the menu.

  • The training certificate is due within 14 days of starting work and the permit within 30; the certificate itself is good for 30 days.
  • Fail the online exam three times and the rule sends you back to the training course.
  • The permit fee is uniform statewide: no more than $15.
