How this list was compiled: Own questions, written to the nine content areas and question counts of the ServSafe Manager Exam Blueprint that the National Restaurant Association publishes (https://binge.paperflite.com/assets/684c4893ec3b025b4d080d1f, headed ServSafe Exam Development FAQs, last updated 5 January 2026, linked from https://www.servsafe.com/ServSafe-Manager/FAQs; both read 2026-10-06). Facts were read on 2026-10-06 in the FDA Food Code 2022 (chapters 1 to 8 and Annex 4), https://www.fda.gov/food/fda-food-code/food-code-2022, full text https://www.fda.gov/media/164194/download, and compared with the FDA Food Code 2026, https://www.fda.gov/food/fda-food-code/food-code-2026; and, for the allergen area, in FDA's pages Food Allergies, https://www.fda.gov/food/nutrition-food-labeling-and-critical-foods/food-allergies, and Food Allergies: What You Need to Know, https://www.fda.gov/food/buy-store-serve-safe-food/food-allergies-what-you-need-know. Each question names the section or page it was written from. Licence: Own work. Every question, wrong choice and explanation was written for this site from the public texts named in each question. Nothing is copied or reworded from a ServSafe exam, a released, sample, practice or diagnostic paper, or the program's books.

How it works

Each form of this unofficial ServSafe test practice has 80 questions, all our own. It is not affiliated with the National Restaurant Association, which runs ServSafe, and no question comes from the real exam.

What the ServSafe Manager exam asks

The blueprint that the National Restaurant Association publishes for its ServSafe Food Protection Manager Certification Examination, read on October 6, 2026, puts the 80 scored questions in nine areas: active managerial control 10, personnel 9, allergens 8, purchasing, receiving and storing 5, preparing foods 16, serving foods 8, cleaning and sanitizing 7, facilities 12 and crises 5. Each form here keeps those counts.

Which Food Code the answers follow

Answers follow the FDA Food Code 2022 and were compared with the 2026 edition on October 6, 2026. Allergen questions also use FDA's food allergy pages. A state or county may enforce another edition, so ask your health department which one applies.

  • Know three cooking lines of Food Code 3-401.11: 145°F for 15 seconds, 155°F for 17 seconds, and 165°F for poultry and stuffed foods.
  • Cooling has two clocks: from 135°F to 70°F within 2 hours, and down to 41°F within 6 hours in total.
  • The 2022 Food Code sets handwashing sink water at 85°F or warmer. Earlier editions said 100°F.

Questions and answers

How many questions are on the ServSafe Manager exam?

90, by the National Restaurant Association's exam FAQ. 80 are scored, and 10 are pilot questions used for research that are not worth any points.

How do you pass the ServSafe Manager test?

The exam's FAQ sets a passing score of 70%, at least 56 of the 80 scored questions. Exam mode here marks a whole form against that count.

Can you take the ServSafe test online?

Only with a proctor. The exam's FAQ says the manager exam is given under a registered proctor and names ProctorU as its one approved online provider. This page is practice and gives no certificate; servsafe.com lists classes and proctors.

Is there a printable ServSafe practice test PDF?

Print on the score card opens a sheet of the questions you just answered, with a tick box for the answer key, and a browser can save it as a PDF. It is our own paper, not a file from the National Restaurant Association.

Is this the ServSafe diagnostic test?

No. The program's 80-question diagnostic test is an instructor tool and is not copied here. The result table after a form shows right and total for each exam area, which points to the weakest one.
