How this list was compiled: Our own questions, written to the competency list of the Job Ready Credential Blueprint for Commercial Foods (code 4120, version 01, original release 2018, content review 2026) that NOCTI publishes at https://www.nocti.org/wp-content/uploads/Blueprints/JRCommFoods4120.pdf , read 2026-10-16: a written assessment of 183 questions in 3 hours over nine areas (Safety 4%; Sanitation 11%; Culinary Career Overview 10%; Culinary Techniques 26%; Recipes and Culinary Math 10%; Purchasing and Management Skills 10%; Menu Design and Nutrition 10%; Customer and Table Service 10%; Culinary Equipment 9%), plus a performance assessment of three jobs. This bank holds 50 in those proportions. Every rule and definition was read on 2026-10-16 on the public page named under its question: the FDA Food Code 2022 (full text at https://www.fda.gov/media/164194/download), FDA pages on HACCP, food allergens and menu labeling, the U.S. Fire Administration, the open textbooks Introduction to Food Production and Service (Egan, Penn State, CC BY) and Basic Kitchen and Food Service Management (BC Cook Articulation Committee, CC BY) in the copies at workforce.libretexts.org, and Wikipedia. Every price and quantity in a sum is made up for the drill, and each computed answer is arithmetic that was worked twice. Licence: Questions, choices and explanations are original work of this site. The open textbooks are used for facts only, and no text, recipe or example is copied from them.
